Most of what I cook, I improvise. I’ve been known to introduce a dish that way, not because I’m going Iron Chef (although I’ve been accused of it once or twice) but because I want everybody to know what’s in it, which I wouldn’t have to do with your average pasta dish or a Country Captain Curry.

They sell goat me at my local supermarket (lots of Carribean and Asian folks near me). Goat meat is expensive…
