    Solution: never buy a commercial cake. Make it yourself from a tried and true, moist dark cake recipe. Always a hit in our family.

    My wife makes great fruitcakes. Wrapped in rum soaked towels in an airtight bucket for a month. I never liked fruitcake until I married her.

    I actually miss the fruitcakes a former workmate used to give out at Christmas. Her family owned the Texas Fruitcake Company whose products featured lots of Texas pecans. A drizzle of Brandy over it and poof it was devoured instantly. Delicious and definitely not a heavy brick like all the others I’ve tried over the years.
