I just wanted to put my two cents in. I’ve been making Gumbo from scratch since my first trip to N.O. back in 1980. It is time-consuming, so I usually double it and freeze some. You can put almost anything that suits your fancy into it, as long as you have the basics down (ie: the roux and seasonings. I favor filé – or ground sassafras leaves – over okra, for a thickening agent and flavor).My favorite Gumbo has jumbo shrimp, chicken, smoked ham and andouille sausage. Now that I’m thinking about it, I may have to make it pretty soon…

Good evening CD kids. Had a dentist appt. today, it was only a filling but ouch!.SelBel I just can’t eat spicy stuff. I’ve tried that sausage once and that was enough to tell me I can’t eat it. I do eat anything I like and want, when I want it. Unlike Dry I have to work it off to keep my size. That’s why I started the TKD classes. Everything I like seems to go to the lower regions. With all the kicks we do in class, I’ve slimmed down quite a bit. :-)
