    Bake some potatoes. When they cool enough to handle, cut off the top side and scoop out the potato, leaving a nice shell. Mix the potato with chopped steamed green stuff such as broccoli, chard, kale, whatever – microwaved is good, just don’t overcook it. Add some grated cheese, and some pizza sauce or chili sauce. Pile it back into the potato shells and bake for 15 minutes or so. Top with more sauce and grated cheese, bake until cheese is melted.

    That’s how we make tacos; hubby doesn’t like the crunchy shells. And just FYI, sliced radishes, sautéed in a little butter taste like mushrooms, if you need extra for your pizza.
