Beet juice is used to pretreat roads for snow storms. Finally, they’ve found a use for them. They also say if you spray beet juice and alcohol mixture on your iced windshield, it is easier to scrap.
½ dozen hard boiled eggs1 can small sliced beets (15 oz)⅓ cup white vinegar⅓ cup cider vinegar2 tablespoon sugar½ teaspoon salt
Instructions
Cook, cool and peel eggs. Strain liquid from can of beets into small saucepan. Set beets aside. Combine both vinegars, sugar and salt with beet liquid in saucepan. Bring to a boil and simmer for 5 minutes. Put eggs in an appropriate sized jar. Put beets on top.Pour vinegar mixture over eggs and beets in jar. Cover and refrigerate. Try to forget about them for a few days – at least two days. Three days and they’re awesome…a few days more and they’re perfect. This recipe easily doubles or triples. Enjoy!
Oh, he’s a man after my own heart! One of the two vegetables I truly dislike. When my kids were about 8 & 10 years old, they went to visit my Mom for a week. And came home and told me, “Mommy! Grandma gave us this really good vegetable called BEETS! Why don’t YOU ever make those, Mommy?”
LOL, because I hate them! I did start buying them for the for the family after that, though. Darn you, Mom!
It’s a funny thing I noticed during old office pot lucks when the same person would keep bringing in the same dish of food that barely anyone touched and it never dawned on that person that maybe their dish was horrible. I would take that as a huge hint if I brought something that was barely touched. Especially time and time again.

I feel the some way about anything with Brussel’s Sprouts in it. As my folks used to say, “It’s enough to gag a maggot and make a buzzard puke.”

Funny thing is, every once in a while I actually like sliced beets if they are prepared properly…

And it can be a bit surprising if you are not forewarned of the effects on your next solid waste elimination. It’s ok to be red this time.

If no one has eaten it the last four years, it’s time to dump it in the trash. The poor dear thinks it’s like a fruitcake; good forever!

Mmmmm… roasted beets. And if no one else wants them there are more for me. Few people know the glorious rainbow that is true omnivory.
