I miss wheat gluten like crazy, but I don’t miss the wheezing and the coughing, or the sinus flare-ups. My allergy to grasses extends to wheat (it’s a member of the grass family.) When I avoid wheat, breathing is easier and I don’t feel like I have a cold all the time. If they ever develop a vaccine to cure allergies I am so getting the shot.
Seriously though…. for the folks who have Celiac Disease, avoidance of gluten is extremely important. Some other folks suggest they have an allergy (inflammatory response) to gluten….. even though thus far the scientific evidence for this is fairly minimal. But, if folks want to avoid gluten….. that is their right and choice.
For me, I think of gluten-rich foods……… and I salivate in anticipation like Pavlov’s Dogs. :)
I was listening to an old radio program from the 1950’s and they referred to white bread as gluten bread. I’ve never heard it referred to that way anywhere else.
My GF is on the gluten avoidance thing. Makes it harder to find or make stuff. More than once I’ve said (a la Monty Python Spam sketch), “Can I have yours? I jus’ luv it!”

Just remember, most people NEED gluten to stay healthy. This has been a public service announcement.
