Since the house and grass are left without color, why is Horace not left without color, too?

As a Houyhnhnm Horace can live forever if he wants to. He just has to go into his own essence and rearrange things on a molecular level should he want to. Not being a modern Houyhnhnm he skipped those stuffy courses and went on to “live life with gusto” not any different from your average human. This is what a Houyhnhnm use to be before the incorporation of an ecto-spider into their brains that carry over along with the genes to succeeding generations giving them calm, rational, logical and intelligent demeanors.

So Horace is out-of-step with that society. They tolerate him and he refuses to have his brain chilled to Mr. Spock’s level of being.
