There’s a special shelf in the kitchen labeled “Penny.” Dirty utensils. Greasy plates. Lipstick glasses. They have their own ready area for the wait staff to pick up their food from the kitchen. No spit shield. It’s like a little festival in the back when Burl sends a dish pack to be rewarmed.
