I have those days too, where I read something I’ve written and think “ugh, what schlock!” Still working on remembering that writing a bad paragraph does not make me a bad writer (or a useless person!)
I’ve never had that problem, mainly with writing, but also with kiri-e. I’ve never associated what I make (or how poor a job I did on it) with my value as a person. But then again, I don’t have much of an audience, so I don’t need to worry about other people judging me based on what they see of me through my work. And I don’t have deadlines or commitments. If something I’m making doesn’t turn out well then I can just trash it and start over, and keep doing that until I get something worth keeping.
As you’ve found out, kiri-e is the Japanese art of making pictures by cutting paper. Generally, using a kind of x-acto knife and a rubber-topped cutting board. I’m hoping to turn this into something useful some day. At the moment, it’s still something I just dabble at because of the amount of time it takes. I think that some of M.C. Escher’s work lends itself particularly well to this style. I tried doing his self-portrait, and think it’s not too bad.

Look at it this way. There are thousands of people who wish they could do what you can do.
