I used to go to a restaurant that served soup du jour. I stopped going because it was different every day. There was no consistency. It’s a shame because I really like soup du jour.
my dad’s best friend was Italian and his mother started cooking her tomato sauce on Monday to serve on Sunday, and slowly cooked it all week long from tomatoes and herbs she grew in her backyard….loved her and her cooking
I once worked in a restaurant where the owner (and chef) often used the soup of yesterday as the base for the soup of the day… day after day. The odd thing was, that it usually was really good.
