The only reason to butter it is for the sugar and cinnamon. .As for Jam, RIPE strawberries only need a Tablespoon of sugar to make the pectin set, not as much or more sugar by weight. (Also, also, that much at once not only won’t fit in a canner but won’t gel right! 8 1/2 cups fruit max, and only that for the low to no sugar recipies, otherwise we’re talking 4 cups fruit and 4 of sugar tops.
