I’m no expert, but I would imagine that “Coach Pitch” is a level where a coach is the pitcher, instead of a peer. Considering how wildly kids at this age throw, it would be really difficult to hit their pitches. (That, or every throw would be a “ball”, unless the batter swung his bat.)

Coach pitch is between t-ball and regular softball or baseball. The kids field and bat, while the coaches pitch for them.
