25 years ago Anthony Bourdain wrote if you want to work in a restaurant you better learn to speak Spanish. He was correct. All the high end restaurants near me, including sushi and Benihana type restaurants have Latino chefs. I like going to a taco truck, or a greasy spoon carry out Mexican place and ask them to serve me what they would eat at home. Always had a good experience.
Just ate last night at one of many fine Mexican restaurantes available in Madison, Wisconsin. My wife and I have tried them all and know which ones have the best totopos, horchata, and flan — and no, they’re 3 different establishments (not that there’s anything really wrong with the offerings at the other places), which gives us an excuse to keep rotating.
