In Lakeland, FL 10 years ago, while Ma lay a-dyin’, I asked a black nurse where the best BBQ joint was around and she had to ask the older nurses, who eventually got me up the road to a lil’ house converted to a ‘diner’ on MLK jr. Ave., and there was no askin’ what kinda sauce one wanted. One got what one got, and it was DEEEElishish !! A pearl in a sea of fast-foods fershure !. GoogleMaps shows the place has been razed and gone. Sad.
I read in the paper yesterday, Dave Anderson, who started Famous Dave’s, is returning to the helm after a several year departure. I hope this will be a good thing as the quality has been dropping for some time now, and while FD’s used to be out first choice for true Bar-B-Que, it isn’t even on our list anymore…

I generally skip the sauce that local BBQ places put on the table; the meat usually tastes just fine as is.
If I use a store-bought sauce I don’t really have a favorite flavor, but I do sometimes add sliced jalapeños…

Good Q doesn’t need sauce. Ergo, if you need to add sauce, it’s not good Q. Anyone can cook a pig, it takes a Master to BBQ it.
