    Years ago i decided making resolutions was pointless. Knew i would never keep them. So why bother.

    Warm homemade cherry pie with homemade vanilla ice cream, don’t get any better than that.

    As easy as cherry pie. Crust: 2 1/4 Cup flour, 3/4 Cup shortening, 3/4 teaspoon salt, about 8 Tablespoons [iced] cold water. Mix salt into flour, cut in the shortening. Add water a bit at a time until dough can cling together in a ball (it may take more or less water, depending on humidity and altitude). Wrap the ball in saran and refrigerate for about 30 minutes. Filling: 2 cans of sour (pie) cherries, 3/4 Cup of the cherry juice from the cans, 1 Cup sugar, 2 Tablespoons quick-cooking (Minute) tapioca, 1 Tablespoon butter or equivalent, a dash of salt (about 1/8 teaspoon). Drain cherries (saving juice) and combine with sugar, tapioca and salt. Pour juice over top and mix in gently. Allow to stand for about 20 minutes. Heat over to 400 F. Roll out half the pie dough on floured surface and line a pie pan. Pour in filling and dot with the butter. Roll out remaining dough and place on top, sealing edges. Poke holes in top crust with a fork and sprinkle lightly with a bit of sugar. Place pie on a cookie sheet or equivalent (for drips) and bake 50-55 minutes. After 30 minutes, cover the edges with foil to prevent over-browning. Cool before cutting. Note that the filling is gluten-free (tapioca) and can be dairy free as well.

    I make the same New Year’s resolution every year—not to make any New Year’s resolutions. I have an amazing record of sticking to that.
