    Moisture loss is a factor, but the whole answer is a lot more interesting.

    “Staling can be thought of as almost the opposite process; it’s called starch retrogradation. Essentially one of the parts of starch, the amylopectin, recrystallizes. It comes out of the tangled network, and forms little blobs of itself instead (note the increase in available water too).”

    I that the same drawing of Poncho copy and pasted on all three panels?Also never noticed his tail have an arrow head at the end. How have I missed that?

    If anyone wonders what a dog might eat, I once pulled an entire mouse out via my dog’s mouth when I saw a little bit of something sticking out of her mouth. Yes, she was on a leash and I must have glanced away for a second. It was not fresh, having already been eviscerated by a hawk or turkey vulture. Other than the guts missing, it was an entire mouse, anyway.
