    Italian cooking is hyper-regional, obsessed with “purity” especially if it’s mythical, and rejects experimentation. It never really recovered from Mussolini. Americans made pizza better and set off a wave of innovation which was exported back to Italy and claimed by them once the serial numbers were filed off. The reason people like pineapple on pizza is that it’s delicious. Same reason they don’t like pickled herring with crabapple on pizza; those aren’t delicious. And do you know what? India does pizza better than the US or Italy
