Leapin’ Lizards friends- who (besides me) will be watching “Annie Live” on NBC tonight? Get your popcorn ready- it sounds like a hoot!

Yes Michael- Strawberries and pineapple are delicious together in a pie.

As if you were making traditional Yorkshire Pudding, even though you are using a nonstick muffin tin, it is important that the oil (or meat fat) is sizzling when you pour in your batter. Also, for my Christmas dinner I use dried cherries instead of cranberries. Delicious with your Christmas meat.

thanks David- this sounds so delicious. I’m off to the market – I haven’t had fennel in ages. I’m going to add some diced roasted garlic and send your recipe over the moon!

great Sunday Breakfast with hot buttered sourdough toast. And for us meat eaters, crumble some good spicy cooked pork sausage on top of the eggs before baking. (maybe I can’t wait until Sunday!)

Ham would be delicious in this recipe.

Extra yummy if you add a pound of cooked Jimmy Dean sausage.

Cut off a small piece off the sweet potato or yam so it won’t burst in the oven. One Hour at 375 degrees. Or you can boil them on the stove for about 25 minutes.

or better yet- add some chopped cooked shrimp to the stuffing.

To make it even more delicious, sprinkle cooked chopped sausage or bacon and some shredded cheese over the salsa before baking.
