As if you were making traditional Yorkshire Pudding, even though you are using a nonstick muffin tin, it is important that the oil (or meat fat) is sizzling when you pour in your batter. Also, for my Christmas dinner I use dried cherries instead of cranberries. Delicious with your Christmas meat.

great Sunday Breakfast with hot buttered sourdough toast. And for us meat eaters, crumble some good spicy cooked pork sausage on top of the eggs before baking. (maybe I can’t wait until Sunday!)
Cut off a small piece off the sweet potato or yam so it won’t burst in the oven. One Hour at 375 degrees. Or you can boil them on the stove for about 25 minutes.
