I would do this the other way around. Low heat, 325/300 for 1-1.5hrs to render the fat. Then uncover, bast and cook at 375/400 for 20-30 min. I like Alexikakos rum sauce and will try that next time. And I might try that tip about the rum.
I think Brett might have meant “Aircraft Carrier” beer. They are flat. I was in a antiaircraft squadron in the Marine Corps and we were not flat. But we did drink a lot of beer. Brett, I would stick with Nighthawks and go with “pancake beer”.
