Quick Kosher – animals must have split hooves and chew their cud (which is why no pig). So yes cow, no horse. Correct about fish must have fins and scales, so no catfish. Seaweed is fine, it’s a vegetable. All vegetables and fruit are fine as long as you can ensure there are no critters (bugs, worms, etc) in them, as those aren’t allowed. Guess what you guys are often eating by not checking first….
I’m not sure how to embed a link, but if you search for cookie brittle recipes, you’ll find a bunch. Look for one that doesn’t melt the butter. I sub margarine for butter, and make sure the chocolate chips are dairy free.
I have an incredible recipe for vegan CC cookies. It’s more like cookie brittle, as it’s baked in one sheet and then broken up when cooled. My kids called it cookie crack and it was a high demand commodity in the lunch trade.
