The sit down restaurant I work at has bison as well as beef. You do NOT want to overcook bison. Anything over medium it starts drying out and gets chewy.
I work at a bar, and if I remember correctly while at the bar/table they don’t have to wear one. If he steps away from the bar then he does, but unless it’s in his pocket he doesn’t seem to have one. The bar and grill I work at will provide one if needed.
