Well, if He hadn’t let the dinosaurs go extinct, there might have been some nice, big Brontosaurus ribs. (Would they taste like chicken?) Adam’s rib would serve enough only for the Cherubs’ table. (But would they still eat pablum?)
The simple reason is to maintain continuity: the woman was “bone of [Adam’s] bone and flesh of [his] flesh” [Gen 2:23], unlike the animals Adam named earlier [vv 19-20].
