My old boss BS the Maine Cute Monster suddenly started chewing on my hair after I changed shampoos. It turned out the new shampoo contained catnip extract. Back to the old shampoo – problem solved!
I never had a cat who chewed my very long hair. But one cat was terrified of being in the car, so when necessary, I would hold her and she would put her front paws on my shoulder (and dig in) and hide her head under my hair while grasping as much hair as she could in her mouth, literally hanging on tooth and nail.

My late, lamented Nimitz liked to chew and lick my hair. Monroe does it once in a while. He’s the one who sniffs my mouth intently. Weird cat.
