Henri wanted to suggest that perhaps the bird wasn’t all that fond of gruel. Especially since he knew he wasn’t.

In order to sex a chick – determining whether it’s male or female is important to the farmer – one has to pick it up, turn it over, and gently turn it sorta inside out. The quicker a chicken sexer can do this for large batches of chicks, the better.
