    Crockpot beef and potatoes sounds pretty good particularly if you add a can of dark beer (or red wine) to the crock. Add a couple of pounds of carrots and you have my celebratory dinner of choice.

    for us it was carrots and potatoes and onion. Celery, if added, was removed after cooking

    Crockpot/slow cooker was a marvelous invention. Toss in anything edible with a little liquid, including any old slab of meat no matter how tough, set it on “low” in the morning, and by nightfall you have fully cooked and tender meat and veggies.
