A dry rub is good, don’t get me wrong, but give me Eastern NC BBQ any day. (now let the war begin) If you get down to it, you can’t rub a pig the wrong way.
I got transferred to Madison NC some years back. A salty flatland boy sent to the foothills/piedmont…..never a good thing…Anywho……being new to the area all the locals said if you want good BBQ go to Fuzzy’s. The BBQ was not bad, and I have had some bad “bbq” (let’s just say don’t get BBQ in Alabama), and it was interesting that you could get sliced or pulled but I just never could get over slaw with ketchup in it.Perhaps that was not the best example, but they sure called it Lexington style.
I’ve had BBQ all over the South, from Texas to NC, and I like it all! Beef, pork, or chicken, tomatoey, vinegary, spicy, or sweet, it’s all good! No argument here about which is best!

I suspect those old boars would taste pretty strong. Yep, there’s nothing quite like the smell of boar meat. Yuck!
