Yes, if you just fold the little bag over and toss it in the fridge, your coffee will taste like last weeks broccoli, but if you keep them in a dry, airtight container, refrigerating/freezing coffee beans will extend their shelf life dramatically. Fresher is always better of course, but that’s true of almost anything. I prefer fresh vegetables, but if I have to eat them a month old, I’d much rather they were frozen than not.
