    Nairebis, while a properly prepared fruit cake is delicious, it is often a homemade item at Christmas from people who don’t know how to make it and never really learn because they only try once a year.

    The traditional English fruitcake is trickier than quickbread because there is no leavening - it depends on the eggs to rise. The most common mistake is to overmix and overbake, resulting in a product so hard, it is difficult to cut with a knife. This is the source of fruitcake jokes.

    P.S. My favorite fruit cake is the Spanish/Italian style - yeast raised, like a giant donut. My second favorite is the German Stollen.

    If you’ve never tried a Collin Street Bakery fruitcake, you’re missing out. They beat even the best Old-World fruitcakes hands down.

    I like peach brandy on shortcake, ice cream, and in coffee. I tried it on cornflakes once…Baily’s works better….

    There used to be Mission Pack fruitcakes, with honey-glaced fruit, big chunks, in a little bit of cake.

    But they all got eaten, including the ones we kept…

    There was an episode of “Golden Girls” where the girls were serving Christmas dinner at a homeless shelter, and one of them brought along all their uneaten fruitcakes to offer as dessert. After everyone had left, not only were the fruitcakes still there, but there were more of them than before. Classic comedy.

    Did you know that Admiral Horatio Nelson, who was killed at the battle of Trafalgar, wasn’t buried at sea which was usual for that time, but was packed away in a barrel of brandy and was preserved that way until his ship, the HMS Victory, arrived back in England? Boy, talk about getting pickled!!!! This is no jive, y’all, that’s the story the tour guide told us at the HMS Victory tour in Portsmouth, England.

    Pro fruitcake, long family line of the same. Amaretto is the liquid of choice in my family, but had an auntie (ahn-tee) who liked hers soaked in Jonnie Walker Black Label. After she died she had a few pieces left over from the previous Christmas (she had iron will to leave it that long) and the family snacked on that and decreed it the best ever (had to have been at least 9 months old if not almost 2 years).

    The trick to really good fruit cake is to start Thanksgiving day, use pecans and hazlenuts and DRIED – NOT candied – fruit. When still warm out of the oven, give it the first dose of booze mixed with powdered sugar. Seal in tight plastic containers and redouse and baste for the next 20 days. By Christmas it should be FINE.
