    Still pretty meaningless without something to compare it to. Like American’s eat one ton of food every year, while those in Sudan eat less than half of that. Or something.

    I mean, what’s the point of making the point that “American’s” eat that much, without another country, don’t we all eat just about the same amount? I would expect that to vary a little bit, but not that much.

    That ton may also include the discards, ie there is a term called “dressing percentage” which translates for every 1000 lbs of moo cow on the hoof, how many pounds are eaten? Hooves, bones, hides, and most innerds are discarded (Liver is edible, but I don’t think anyone has a use for stomach, eyes, colon, gall bladder, etc)Although, bones etc may be turned into fertilizer, but certainly not eaten.

    The tail can be used for ox-tail soup. There was a cartoon one time where a kid was sent back to the butcher explaining that the ox-tail soup turned out great. Could I get another from the same ox?Uh, no!

    When I was growing up, there was a butchering day each winter. A tank of water was brought to boiling, a pig selected and killed, and scalded so the hair could be scraped off. The least liked job of the operation was “running the guts”, ie scraping the small intestines clean so they could be used for stuffing the sausage. (The large intestine was discarded!)The good old days on the farm – good because they are gone!

    Doing genealogy research, there were incidents where a curious kid would fall into the scalding tank. Farm life was – and still is – hazardous!
