    I was never fond of zucchini or any variety of squash, my mother was a lousy cook so she never learned how to steam them; her favorite way of cooking squash was poking holes in the rind and microwave them, if they go boom then she knew they were done.

    The bears wouldn’t touch the zucchini when they raided the patch. Still the wife refuses to believe that Zucchini is so low in nutrients that wild omnivores won’t even bother to eat it…

    And some onion salt, fresh ground pepper, basil, oregano, and cilantro. Along with other veggies, like mushrooms, peppers, broccoli, string beans etc. Low heat and not too long.

    If you are allergic to iodine, grated, drained zucchini can be used as a substitute for crab meat. Makes quite acceptable “crab cakes”. Just use your regular recipe.

    Used to hate squash and beets, now I love them. Squash with a bit of butter and brown sugar melted over the top is delicious!

    And my grandkids seem to think cooked beets are on equal terms with candy!

    Actually zuchinni and other squashes can be really tasty if you are a bit creative with spices. And, there is no denying that they are very healthy for you.

    Ratatouille is a good use for zucchini. It is good as an extra for stir fries and a filler for soups or frittatas. Also good as a way to moisten breads & cakes.

    I agree w/Arlo on this one. My brother-in-law has been photographed outside grilling in the midst of an Oklahoma blizzard. If you feel like firing it up, it’s grilling season!
