It will be all right after the processing center adds 10% water for additional moisture. Thought about that the other day, Poultry, processed Hams, etc all with added “Moisture”. Back in the day you would go find a new butcher that didn’t put his thumb on the scale!
When I first looked at it all I could see was a big nut on him and I could not figure out what a big nut would dry out a turkey. Then when I figured out it was a reflector I understood it.
