My dad used to do that with toasted cracked wheat bread and lots of butter. I mocked it until I tried it. It was great! Don’t knock it till you tried it!
I actually made this once: Millbrook white bread and French vanilla ice cream. I was 6 at the time, and mom told me I was a good girl for getting all my chores done, so I could have an ice cream sandwich. I did not see that she had bought a box of brand name ice cream sandwiches, so I got the ice cream, the bread and a knife and took her statement literally. It was actually pretty good. Might have to make one and be six years old again.

Grandpa didn’t know whether you like your chocolate ice cream with onions and tomatoes, so all he put on it is mustard.

In the Philippines, Singapore and other places, it’s a common street food.
Type in “ice cream bread sandwich” on Youtube.

It is good with sweet breads like pumpkin, banana, gingerbread etc. One of my favourite treats.
