That was one of the jobs on butchering days, “running the guts” ie cleaning out the small intestines so they could be used for sausage casings. (As I recall, the large intestine colon was always discarded.)Back in the “good old days”(Note: the good old days – weren’t!)

My cousin loved them until she found out what they were. It’s pronounced “CHIT-lins”.
