I’ve actually used a sheepshank. Makes a long rope short. But my favorites are bowline and taut line hitch.

Shanking (stabbing) sheep in their flanks sounds painful.
I always found that a difficult knot to tie. Unstable, too until it has tension.
I always had trouble tying that knot. Unstable, too if it looses tension…….
