I learned what enables someone to be a great chef. The way visual thinkers can picture an event before it happens, my wife can taste the effect of adding ingredients before she adds them. And that is how she knows how big a pinch, dash, or smidgen to use.
I run into this problem with recipes out of 19th century cookery books for punches and deserts I want to try. “Teacup full”, “three fingers”, “dollop”, “half-pale”, “splash”, “sprinkle”, “fist full”, etc.

Grandparents were like that. We tried to get some recipes from my grandmother, but it was so hard to figure out exact measurements.
