    Too much salt on the fries, prefers sucrose to fructose in his cobbler. Sucrose is better than fructose? That’s a thing, now?

    It is pH, not PH. He is saying that the salad dressing is tart enough, probably from vinegar or lemon juice. pH below 7 means it is acidic. Acidic things taste sour. Tart means a little bit sour. Vinegar is 5% acetic acid. Lemon juice contains citric acid.

    My dad’s into molecular gastronomy. That’s not really what it’s about. I don’t know all of the ins and outs, but it’s using chemistry to form the food into shapes; he made some sort of cherry sauce into an orb that exploded in your mouth when you bit into it.

    The “epidemic” is because they changed the numbers. 120 used to be a normal reading but they had to sell more metformin so they changed the number to 90 and voila, epidemic.

    there is a chemical Sodium alginate, that works with calcium to form a gelatin skin. Basically you put Sodium alginate in water and either use a high calcium liquid like yogurt or add calcium to another liquid and drop it in to the 1st solution. Fish it out and rinse in it water and BOOM encapsulated yogurt, juice, etc..They have a yearly science gala at the local university and at least 5 student groups did this one with different foods. One made uniform “boba” with a special dispenser, one used yogurt, one made “worms” with a syringe, and we saw others with just juice dripped in and one with beef broth…

    i find that theres nothing wrong with too much salt on fries. im just used to it. if anything the salt drowns out the bad taste of cafeteria fries
