It is pH, not PH. He is saying that the salad dressing is tart enough, probably from vinegar or lemon juice. pH below 7 means it is acidic. Acidic things taste sour. Tart means a little bit sour. Vinegar is 5% acetic acid. Lemon juice contains citric acid.

Basically you put Sodium alginate in water and either use a high calcium liquid like yogurt or add calcium to another liquid and drop it in to the 1st solution. Fish it out and rinse in it water and BOOM encapsulated yogurt, juice, etc..They have a yearly science gala at the local university and at least 5 student groups did this one with different foods. One made uniform “boba” with a special dispenser, one used yogurt, one made “worms” with a syringe, and we saw others with just juice dripped in and one with beef broth…

i find that theres nothing wrong with too much salt on fries. im just used to it. if anything the salt drowns out the bad taste of cafeteria fries
