    I put that in parenthese as an option, because a lot of people are on that bandwagon. I have never been able to tolerate barley, even as a child. After the leukemia treatment it got to where I could not have any grains from large producers, which is about the time celiac disease, and non celiac gluten sensitivity became prominent in American society. Some people believe the increased usage of glyphosphate, a related compound to agent orange, interferes with people’s digestive systems, increasing celiac disease, colitis, ibs, ms and a number of problems that have mushroomed in the past twenty years.

    There is a genuine increase in celiac disease, but many people are going gluten free because it is a fad. First of all there are nutrients in wheat that normal people need, and going GF can make you sick. Second GF foods are generally much higher in calories, and therefore tend to be fattening. Don’t do it just because “my neighbor stopped eating gluten and he feels great”. Maybe your neighbor just started taking insulin and he feels great, too, but that no reason for you to do it.
