Speaking as a former Spanish teacher and long-term resident of Mexico, I can assure you that “padre e hijo” is correct. The Spanish equivalent of “and” is “y” except when it comes before a word beginning with the sound (in Spanish, of course) “i”, in which case “y” becomes “e”. Since “h” is silent in Spanish, “hijo” begins with the “i” sound, hence “e hijo”.
