I’ve heard of sushi, but raw chicken is where I draw the line.
In fact , I think I’ll draw two:
2 1/2 to 3 lb. broiler fryer chicken (whole chicken)
1/2 c. butter, melted
1/4 c. lemon juice
2 tbsp. honey
2 tsp. dried rosemary leaves, crushed
1 to 2 cloves garlic, finely chopped
3 lbs. winter squash, cut into 1 inch rings
6 med. onions, cut into halves
Rub cavity of bird lightly with salt. Place breast side up on rack in shallow roasting pan. Mix butter, lemon juice, honey, rosemary and garlic. Arrange squash and onions around chicken. Brush chicken and vegetables with butter mixture. Roast uncovered in 375 degree oven brushing chicken and vegetables several times with remaining butter mixture until chicken and vegetables are done, about 1 1/2 hours.
