If I followed the times on the box of pasta, it’d be undercooked. I gotta let it go twice as long or longer, then examine it by appearance and taste and texture.
Add about 1 1/2 to 2 Tablespoons of salt when the water comes to a boil. Wait until the water returns to a full, rolling boil before putting in the pasta.

with carrots, just try a token quantity of brown sugar when you go to cook them. makes even canned carrots taste better.

I DON’T salt my water for pasta because I’m at risk for high blood pressure, and the sauce usually has plenty of salt as it is.

Also, far as Indian food goes, there is no such thing as too spicy.
