    We took my aunt Bonita out for dinner one night. She ordered liver and onions “because I never eat it at home.” (She lived alone and could have had it seven days a week.). I said that was why I was ordering steak. She ate about a quarter of it. I didn’t ask if she suddenly remembered why she never ate it at home.

    Cooked well, liver can be delicious. Cooked badly, it can be a substitute for an engine gasket!

    Liver and onions has to be eaten immediately after coming out of the skillet. Wait 5 to 10 minutes and you might as well throw it away.

    I grew up eating calves liver because I was iron deficient and couldn’t tolerate iron pills. Now, I enjoy a good liver and onion entree from time to time. But, I love fried chicken livers anytime.

    Nope. Liver is a filtering organ. No liver, no kidneys and nothing from the lower tract.

    I was lucky growing up because my mom was a superb cook. Liver, cauliflower, Brussels sprouts, asparagus, spinach, pretty much anything kids tend to dislike was absolutely delicious at our house.

    First, cook up about half a pound of bacon.Then, in the bacon grease, cook a large chopped onion.Then, in the oniony bacon grease, cook a pound of calves’ liver (never beef—yuck).Marvelous!

    Unfortunately, Mom ruled when I was a kid. Thank the Lord for ketchup—lots of ketchup!

    That was my most hated meal as a kid…my Mom sat and waited for hours thinking I was going to eat it and there was no way it was going to cross my lips.
