Cows eat plants. I eat cows. Therefore I’m a second-hand vegetarian (or a vegetarian once removed).

Around here you can buy eggs advertised as laid by free-range, vegetarian hens. Since there’s no way you can keep a free-range chicken from eating bugs, logic dictates that bugs are vegetables. Eat up!!

We aren’t herbivores. But neither are we carnivores. We are omnivores leaning to plants over animals to eat.

My grandmother was a native Mexican, and she loved using soy alternatives – not for ethical or dietary reasons, but because they cost less. Dry chunks or bits of textured vegetable protein (TVP) could be reconstituted and flavored with bouillon for fairly decent fake chicken or ground beef. My mother-in-law loved TVP as well, though my wife was never a big fan. However, she does adore eggs with soyrizo, which is increasingly popular at the Latino markets and sometimes takes up nearly a third of the chorizo shelves.
