What is as wonderful as any PÂTÉ DE FOIE GRAS, I think, is properly prepared chopped liver, Jewish delicatessen style… by itself, in a salad, or my favorite way, on rye bread with lettuce, tomato, onions. Creamy/fatty, complex, meaty, nutty slightly sweet. Oh my. I have to drive over to Goldberg’s on Johnson’s Ferry now. On a toasted bagel with a little schmear of cream cheese is good too. Oh, that schmaltz.
I once met a man who claimed to have been a feeder at a foie gras farm. He claimed the ducks almost lined up to be force-fed after the first few times. He said the ducks liked it after they got used to it.

There’s really no need to ingest liver of any sort now that Ipecac is widely available.
