Technically speaking a moat is any ditch adjacent to the castle wall. Some were filled with water.
There was a lot of good design in latter Middle-Ages castles with overlapping fields of fire even. I always chuckle at movies when the commander tells his archers to “fire” their arrows. Before the introduction of gunpowder to Europe, people “loosed” their arrows.
