    As long as there is a dairy industry with a surplus and a government with money needing votes, there will be cheese aging. The highlight of cheese storage is you can buy and sell into the system, so the cheese ages at no cost to the producer.

    I actually did a little reading once on the possibility of getting cheeses and letting them age to the point where I wanted them. Turns out to be a bit more complicated than I could handle at home. As I recall, I would need to keep them cool, but not as cool as they would be in the refrigerator.
