Nobody starts making art for any reason other than “making art”: No way in the world you get paid enough in kudos, dollars, fancy sandwiches or free drinks to make the effort worthwhile… at first. Though some artists do manage to get paid well enough to live on… cheaply. And a very few do better than that. So: If the creator calls it art… it is art.
The mind reels, my earliest memories of technology was my father trying to fine tune the TV and get a signal ahead of an important hockey game (he’d prop up a large mirror on the couch in front of the TV so he could jiggle the knobs located behind the tv), when I got into the work force, the only high tech machine in the place was a xerox, now, holy crap, your phone is also a book, and encyclopaedia, an altimeter, an odometer, a speedometer, a photo album, a star chart, a level, a tape measure, a flashlight, a pickle drawer…

If I tried doing making GPS art when swimming, it would end up as an Escher.

Years ago I learned the only definition of art that makes any sense in the real world: Art is whatever you’re pointing at when you say “That’s art!”.

I don’t believe anyone can swim in a straight line in open water.
