    I have an intolerance to cucumbers. So I use zucchini as a substitute in my Greek salads among other things. Battered fried zucchini is a real treat. Say Charlie, can I have a bag or two. I’ll eat them! :-)

    One that could give Zukes a run for the money is Ampalaya aka Bitter Melon. Planted this year for the first time and still producing even though the Zukes tired out 2-3 weeks ago.

    They can get away from you pretty easily. First year my mom planted some, she made 6 hills (several seeds in each hill). They all sprouted and produced. They hide so well! You think you have them all when they are just the right size, then a few days later you find a few that are gigantic and wonder how you could have overlooked them. Mom found some pretty inventive (for us) ways to use her zucchini. Didn’t actually have to give away much. Baked in breads (regular breads and sweet breads), pickeled (dill, sweet and bread and butter – the bigger ones worked for B&B pickles as one slice would cover a whole sandwich), canned in spaghetti sauces or mixed veggie dishes, eaten fresh – cook or raw in salads. She did some wonderful stuff with it.

    When I do comedy open-mics, I say that I don’t have any shirts or CDs for sale after the show, but my mom’s a gardener so I’ll be trying to unload some zucchini if anyone’s interested.
