    Why wash it? You’re frying it in boiling oil, that’ll kill anything on it. As for gutting it first, that’s a different story.

    It’s because surface cells are putrefying all the time. Even after being cooked, the putrefied toxins can cause digestive upset, if the fish is not thoroughly washed. Plus, it will taste “fishy”.
