Yes, Amanda, you have to find your fun where you can. So thankful my husband likes to cook, but this is exactly how he cooks. He makes something really great and you are on your own if you want anything with it. I’m fine with that. Like Teto85 said, throw some frozen vegetabes in the microwave.
Have to admit I’ve heard of Beef Wellington but haven’t ever eaten it or even seen it. Looked it up and it does look great (except for the pate). It does seem like it would be a big undertaking to make. Dan must love to cook which would be handy if you don’t. Side dishes for me with this would be wild rice and asparagus.

Side dishes add exponentially to the planning needed. That can be a problem to those of us unused to the using the kitchen.
