Perhaps the eggplant needs to be topped with Kraft shredded cheese or Kraft singles for the win win. It seems to work that way in the commecials. But I contend that all vegetables need to taste better is butter.
Eggplant Parmesan is far better a stuffed Eggplant with hamburger meat – several various cheeses, mushrooms, diced bell peppers and tomatoes. Seasoned and Baked.
Its probably better as a leftover in that the cheese flavors will have more time to work into the eggplant. I find many foods are like that. They get better with age.

I’m not a big fan of Eggplant Parm…..however….add in a couple big lengths of mild Italian sausage and some extra red sauce and I will go to town.
